It started in the backyard.
What began in 2012 as one man’s dream became a food truck built by hand, rooted in family recipes, and opened with the whole family behind it.

A DREAM BUILT BY HAND
“It's my dream.”
This BBQ food truck started as JB's dream back in 2012. Like so many great BBQ stories, it began in the backyard—cooking for family and friends, learning the craft, and developing a true passion for smoking meat.
In August 2022, he took a big step and purchased a box truck at auction. He stripped it down completely and spent the next two and a half years building it into what you see today.
Sue, JB's wife, kept asking, “Why do you want to build a BBQ food truck?” His answer never changed: “It's my dream.”
That dream became reality on Labor Day weekend in September 2025, when we officially opened.

THE ROAD SO FAR
FROM DREAM TO OPEN DOORS
SEP 2011
Grand champions
He entered a local BBQ competition with friends and brought home the Grand Champion title.
2012
Backyard refinement
He continued perfecting his smoking technique in the backyard for family and friends.
2018
The first big smoker
He purchased his first industrial smoker and took another step toward making the dream real.
2022
The step van
He purchased a very used 1979 Step Van and began converting it into the Covenant Barbecue food truck.
SEP 2025
Covenant opens
The 1979 Step Van conversion was completed, and Covenant Barbecue officially opened on September 5, 2025.

Our first season
The first season of Covenant Barbecue begins—and we feel so blessed.
